The grapes for Sauvignon Blanc are harvested by hand and kept in a refrigerated environment overnight before destemming and pressing. The first harvest takes place when the grapes have lower sugar levels, giving the wine more vegetal aromas and refreshing acidity. The second harvest takes place when the grapes have reached full ripeness, bringing out more intense fruity and tropical notes.

The first harvest takes place when the grapes have lower sugar levels, giving the wine more vegetal aromas and refreshing acidity. The second harvest takes place when the grapes have reached full ripeness, bringing out more intense fruity and tropical notes.

This two-stage harvesting method creates a complex and balanced wine with harmonious acidity.

Sarah’s Creek Sauvignon Blanc has a complex aromatic intensity with notes of passion fruit, grapefruit, and ripe fig, combined with a fruity character and balanced acidity on the palate.

The wine remained in contact with the lees for 3 months, giving it greater fullness and volume.

Tasting Notes:
Soft greenish-yellow color. The nose reveals aromas of passion fruit, gooseberry, and ripe fig. A wine with an intense fruity character and a cool, lively aftertaste.

Food Pairing:
Enjoy chilled with grilled fish with lemon and fresh avocado salad.
